The "Scrostaté" model scraper is used to remove the rind from the cheese disc.

CYCLE DESCRIPTION
The newly discarded disc arrives on the belt which, in its initial part, has a gate for handling the product.
As a first step, the centering and measuring of the disc is carried out, which in this way allows the disc to be aligned with the cutting blades.
Having done this, using a special program, the off-set parameter is calculated with which the crust is removed.
The cutting station consists of two blades that have a horizontal excursion to adapt to the measured measurement.
